We eat a lot of baked chicken in my house. It’s healthy, easy and so versatile. I’m always trying out new ways to bake chicken and tweaking recipes to make them my own. This Bruschetta Chicken is really easy and SO GOOD!
Having two young children, I don’t have the time (or the energy) to make big, elaborate meals. The simpler the prep for our dinner, the better. When I made this chicken yesterday I prepared it in the afternoon and then put it in the fridge for a couple hours until we were ready to eat.
I try to let my chicken marinate for any recipe whenever possible because the flavor ends up being so much better!
I’m calling this Lazy Mom’s Bruschetta Chicken because some of the things I do for prep are the lazy version of the original recipe. If you aren’t lazy and tired like me then awesome, I’ll show both ways you can make it. I’ve made it the other way before too, it’s really not much different.
The awesome thing is, this recipe is delicious either way you make it!
How to Make Lazy Mom’s Bruschetta Chicken
Put flour and eggs in separate bowls. Dip back and forth until coated to your liking. I do it few times because I like the crust on the chicken to be nice and thick.
In another bowl mix parmesan cheese, crushed croutons, salt, pepper and butter. Dip chicken into mixture on both sides and place into greased baking dish. Sprinkle any remaining on top of chicken. Yum!
You can use Italian bread crumbs in place of the crushed croutons if you want. I really like the croutons though. They make it extra crunchy!
Cover with foil and bake!
If you want to prepare this part before hand and put it in the fridge until your family is ready to eat, you can do that too.
Put diced tomatoes in a small bowl. (You can use canned roasted diced tomatoes like I did, because I’m lazy) OR you can dice up a fresh tomato. Totally up to you. Add Italian seasoning (or 3 tablespoons on fresh minced basil if you’re “extra” like that), garlic, olive oil, salt and pepper. Mix all this up and spoon over chicken when it’s done in the oven.

Lazy Mom's Bruschetta Chicken
This delicious Bruschetta Chicken has the best crunchy coating. This is a family friendly meal that you can make easily and everyone will love.
- 1/2 cup flour
- 2 eggs beaten
- 4 boneless, skinless chicken breasts
- 1/4 cup crushed garlic croutons
- 1/4 cup grated parmesan cheese
- 1 tablespoon butter melted
- 1/2 can garlic roasted diced tomatoes
- 1/2 tablespoon Italian seasoning
- 1 teaspoon crushed garlic
- 1 tablespoon olive oil
- salt and pepper to taste
- Preheat oven to 375 degrees.
- Grease 9×13 baking dish.
- Place flour and beaten eggs in separate shallow bowls. Dip chicken into eggs then flour and repeat as desired.
- Combine crushed croutons, parmesan cheese, melted butter, salt and pepper.
- Coat chicken in crouton mixture.
- Place in baking dish and sprinkle with remainder of crouton mixture.
- Loosely cover with foil and bake for 30 minutes or until chicken is cooked through.
- Combine diced tomatoes, Italian seasoning, garlic, olive oil, salt and pepper in small bowl.
- Spoon mixture over chicken.
