A few months ago a girl I know posted a super simple taco soup recipe on instagram. It looked really good and I already had all the ingredients on hand, so I figured I would give it a shot. Holy crap am I glad that I did!
That recipe has become a household favorite and I’ve made it several times since then!
Every time I’ve made it I change little things just to improve it and make it the perfect meal for my family. Hence why it is now taco chili and not taco soup.
Now that it is cooling off it really is just the perfect meal and it is SO EASY. My family loves mexican food, so this is awesome because it puts a yummy spin on your regular chili recipe.
Even my four year old eats it well, so that is a major plus.
All of the ingredients go into one pan meaning easy clean up. That is pretty much a requirement in my house!
How to Make Insanely Easy Taco Chili
This meal can be made and served quickly or you can let it simmer for a while if you want to. It’s just really versatile. This last time I made it I actually browned the meat and then put all the ingredients in the crock-pot for a few hours and the flavor was even better than usual.
Okay, so first brown your hamburger meat and drain the grease. Add ranch style beans, black beans, corn, dry ranch mix packet, taco seasoning packet and can of rotel. (If you are doing it in the crock-pot to sit for a few hours, wait until about 15 minutes before serving to add the rotel.)
Just mix all that together and cook on medium-high heat until heated through.
That. Is. It.
Seriously, I don’t think it could get much easier than that.
When you’re ready to serve, garnish with shredded cheese, avocado, sour cream or queso…the possibilities are endless. We eat this with tortilla chips, but you could also serve it on top of salad. I’m going to try that next time I make it!

Insanely Easy Taco Chili
This one pan recipe is super easy and perfect for hectic days. Taco Chili is full of flavor and a great warm meal for the fall and winter months.
- 1 lb hamburger meat
- 1 can Ranch Style beans
- 1/2 can black beans
- 1 bag sweet frozen corn
- 1 can Rotel
- 1 dry ranch mix packet
- 1 taco seasoning packet
- Garnish (your choice!) shredded cheese, avocado, sour cream, salsa, tortilla chips
- Brown hamburger meat on medium/high heat and drain grease.
- Heat frozen corn in microwave as packaging suggests.
- Add Ranch Style beans, black beans, Rotel, ranch packet, taco seasoning packet and corn. Stir until combined.
- Cook on medium until heated throughout.
- Serve in bowls with garnish of your choice.
